cauliflower dal with panch phoran

i'm going to do something really, really lame and repost a recipe that i've written about before: cauliflower dal with panch phoran.
so lame, i know. but i made another big pot of it tonight for dinner and fell love with it all over again. this time was more of a textural success since i used the right kind of lentils--red ones, that fall apart easily with a gentle prodding on the stove, collapsing into a thick sauce as they wind their way around tiny trees of cauliflower.
i did that part differently too, using a magnificent crown of romanesco cauliflower that i got at the farmers market. some people find romanesco's taste more akin to broccoli than to its namesake, so if that idea bothers you you might use regular cauliflower, but i thought it was delicious here.
and i threw in a jar of tomatoes that i canned in september, and they tasted like summer all over again: with much less of that harsh acidic bite that storebought tomatoes usually have. sweeter, but with a gentle tomato presence. i served the whole thing over some wonderfully fragrant bamboo rice that i picked up at rainbow grocery, but any rice will work here--black, white, brown, jasmine, basmati...
i suggest tasting often as you cook and playing around with the spices here. mine is different every time i make it: sometimes i throw in a teaspoon of garam masala, sometimes cumin, coriander, more ginger or turmeric, etc...and definitely don't be shy with the salt.
and what better place than in an annoying recipe repost to remind you that while some produce may still be beautiful at this time of year, it is officially ugly food season! i might have given myself away with that frightful cabbage soup the other day, but now that it's december let's officially ring in a month that promises endless khaki, chartreuse and orange pot sludge. may it be the most hideous, stick-to-your-ribs, comforting food of the year!
